Cheese Sauce

Yummy served over steamed broccoli or cauliflower; or for the cheese sauce layer in Lasagne.

 

Ingredients:

2 tbspns butter

2 tbspns flour

approx 600 ml milk

pinch of salt      

8-10 tbspns grated cheese (a mixture of cheddar and mozzarella is good)

 

Method:

Over a medium-low heat, melt butter in the saucepan. Add flour and stir to combine to a paste. Keep stirring this mixture (known as a roux) for a couple of minutes. Add milk in small amounts; keep stirring and as the mixture thickens, add more milk.

When the mixture is a nice thick creamy (no lumps!) texture, add in cheeses and stir through. Turn down heat and add salt, keep stirring to amalgamate cheese.

When cheese has melted, taste for seasoning (you can add a little black pepper at this stage if you like) and voila.
