Falafel
Another favourite of Lebanese restaurants and cheap student eateries everywhere. Unfortunately it is much abused - overcooked, dry, made from a packet mix. When fresh- and home-made, this peasant food makes grand eating.
Serve wrapped up in pitta bread, with hummus or aubergine dip drizzled over, and diced tomato, red onion, lettuce, whatever.
