Nachos
Best. Junk Food. Snack. Ever. A great way of using up leftover Fresh Tomato Sauce or Classic Ragu (bolognese sauce), or as a party/night in junk food fix.
Serves, um, 1? (I wish I was joking ... j)
Ingredients:

1 packet taco seasoning mix |

|
several handfuls grated cheddar cheese |
1 large bag corn chips |
|
sour cream |
Method:
Lower heat under the basic tomato or ragu sauce in frying pan (or if using leftover sauce, put a little canola oil into a non stick frying pan, add sauce and warm up), add taco seasoning mix. Mix through and allow to simmer for about 10 minutes, allowing spicy flavours to amalgamate.
The mixture should not be too wet; if it looks too soupy raise heat to evaporate liquid off; otherwise nachos will get way too soggy.
Pile corn chips on a microwave-safe plate or bowl, heaping in centre with thinner layers on the outside. Spoon half a dozen or so tablespoons of the spicy tomato or meat sauce over, and scatter grated cheese all over (again heaping in centre but don't miss the edges completely!)
Put plate into microwave, heat on high for 1 minute 30 seconds.
Spoon dollops of sour cream and guacamole on top and eat immediately.
Make and eat further servings with corn chips, sauce, cheese, guacamole and sour cream as required!
