Rosemary Potatoes
Great with roast or grilled meat, chicken or fish.
Serves 4.
Ingredients:

6 - 8 white or pink waxy potatoes, peeled, cut into quarters or eighths and parboiled |
2 tspns dried rosemary OR large sprig fresh rosemary, torn into pieces |

6 cloves of garlic, peeled and sliced into slivers |
sea salt/rock salt |
|
ground black pepper |
extra virgin olive oil |
Method:
Toss cubed potato in baking dish with garlic slivers, rosemary and olive oil. Sprinkle with sea salt and a little ground pepper.
Put potatoes into moderate oven (180oC) for about 390-45 minutes or until golden brown and crispy.
You can discard the garlic and rosemary if they look too burnt; personally I like the caramelised flavours.
