Spicy Pilau Rice

This is my version of a Middle Eastern-style rice dish to serve with shish kebabs or other grilled meats; it is a major cheat I admit, as I cook the rice in my electric rice cooker and stir through the spices, stock and nuts (almonds or pistachios) close to the end. Horribly unorthodox, and yes I should be shot, but it works!

Serves 4

 

Ingredients:

long grain rice to serve four

100 g unblanched almonds and/or pistachios

1 tspn turmeric

1 tspn cumin

1 tspn ground cardamom

black pepper, salt

50 ml strong chicken stock

 

 

Method:

Cook rice by absorption method or in rice cooker. Chop almonds and/or pistachios roughly. Toward end of cooking time stir spices, pepper and salt, stock and nuts through the rice until rice is evenly coloured and nutty, Serve with steak, shish kebabs, grilled fish, whatever.

 

I am such a cheat. But it works!
