Ingredients;
2 tablespoons of honey
1/3 cup liquid glucose
1 1/2 cups caster sugar
3 teaspoons bicarbonate
soda
Method;
Use non stick baking paper
to line the bottom of a baking dish.
Place sugar, honey, glucose
and 60 ml of water in a medium to large saucepan (enough space is required
for mixture to rise to the top.
Cover pot and slowly bring
to a simmering point, making sure all the sugar has dissolved.
Remove the lid and clean
off any crystals on the side of the saucepan with a wet brush.
Increase the heat to medium
and simmer briskly until it becomes golden brown.
Turn off the heat and whisk
in the bicarbonate soda and pour quickly into the prepared baking dish.
Set aside for 1-2 hours to
set, then break into pieces.
Store in a airtight
container in the freezer.
